Although there is a salary range listed as indeed requires for posting this position compensation is completely negotiable depending on knowledge and experience. The shift can be flexible depending on production schedules but the majority of the time it will days. You may not meet all the specifications below, you may be currently operating a smokehouse, we will train the right person with an interest in the smoking, curing and fermenting of meat and the process of smokehouse product quality and production. Adhere to company guidelines for yield, processing and quality controls Maintain exceptional consistency in product production Thorough knowledge of specifications with respect to PH Level, Water Content, dryness, texture. Monitor smokehouses for smoke and colour development Monitor cooking temperatures on computer readout to ensure correct temperature of product is reached. Verify with manual thermometer and record information in smokehouse monitoring record Expert monitoring of the cooking /smoking, drying and fermenting in controlled stages of production to ensure they meet all food safety and product quality standards; Ability to monitor smokehouses cycles to maintain quality and consistency and adjust smokehouse programing as needed. Follows proper food safety and handling procedures to meet regulatory requirements; Cleans and sanitizes equipment and working areas where required; Comply with health and safety and food safety standards; Maintain a neat, well-groomed personal appearance; and Other duties as required. NOTE: If you are hired, prior to your start date and as a condition of your employment, you will be required to provide proof that you are fully vaccinated against COVID-19 or have a valid medical or other human rights exemption.
